Fruit extract, involves removing the essence or taste of the fruit using methods such as steam or alchohol. It does not involve the pulp or sugar but just the flavour and sometimes some colour. A concentrate is different from an extract as it is produced through the removal of water from a juice while reconstituting it with the same amount of water removed. The water content is removed to reduce the weight and volume of the juice. The nutritional value of the juice is not affected in concentrates.
